دودھ میں روا اور سمنک حل کرکے پکایا ہوا حلوا، حلوا سوہن کئی قسم کا خاص طور سے مشہور ہے ایک کرارا یعنی سخت جو اصطلاحاً پپڑی کا حلوا سوہن کہلاتا ہے اور نشاستے کے پانی میں برابر کا گھی اور قند ملا کر تار ہند چاشنی کے طورپر پکایا جاتا ہے، دوسرا نرم جو دودھ روے اور سمنک کو ترکیب دے کر بنایا جاتا ہے اور اس کا رنگ لاکھی ہوتا ہے اس لیے حبشی، جوزی یا گوندھے کا حلوا سوہن کہلاتا ہے، یہ نام ابتدا میں اس کی سختی کے باعث رکھا گیا تھا بعد میں ملائم کو بھی اسی نام سے تعبیر کرنے لگے.
